Recently, engineers at Columbia have developed new technology that uses lasers for cooking and 3D printing for food arrangement, users can adjust the shape, ingredients and flavor individually for each dish.
Under the guidance of Mechanical Engineering Professor Hod Lipson, the digital food team is building a fully autonomous technical personal chef. The team has been developing 3D printed food since 2007, since then, food printing has moved into printing other fields.
In a new study published on September 1, 2021 by Science of Food, the team explored various cooking methods by shining blue light (445 nm) and infrared light (980 nm and 10.6 μm) into chicken, which they used as a food system model. They printed samples of chicken (3mm thick by ~1in2) that tested and evaluated a range of parameters including temperature, color, moisture retention, and flavor differences between laser-cooked meat and kitchen cooked meat.

They found that laser-cooked meat shrank 50% less, held twice as much moisture, and showed the same flavor development as conventionally cooked meat. In fact, two people testing through taste preferred laser-cooked meat to conventional cooking samples.
However, the team has not yet developed "Food CAD" - a kind of Photoshop about food. That's why we need high-level software that allows non-coders or software developers to design the foods they want and need a place where everyone can share that digital recipes.
Food is something we all interact with and personalize on a daily basis, now putting software into cooking will make meals even more enjoyable.
